Prepare some delicious Oriental style rice noodles with chicken and vegetables! This dish is not only very healthy but it’s also easy to make and something my three-year old loves. If your children are picky eaters, this recipe is especially for them.

This recipe is delicious in addition to being versatile and economical. It can be prepared with your favorite vegetables and with your favorite protein – beef, fish, shrimp – to create your own combinations. You can even make a seafood mix with surimi. Whatever version you create, it
will be delicious.
My three-year-old loves when I make this dish and I love to do it because it contains vegetables and protein so I know I'm giving him something nutritious and complete.
Remember, if you have issues with diabetes you should only use a 1/2 cup of the noodles because it can raise hypoglycemic levels.
What I love about rice noodles is that they have a very neutral flavor, so they will absorb the flavors you add, in this case soy sauce. You can even use low sodium soy sauce to make it even healthier.
Rice noodles are very common in Chinese, Vietnamese and Thai food. You can find them in different styles and since most are already cooked you do not have to boil them and instead just soak in hot water. In the video, I explain how fragile they are when dry but once they hydrate they become flexible and tender. Rice noodles can be also be fried but I’m teaching you the healthy way, without using oil.
These noodles can be purchased at most supermarkets in the international food section/aisle.

Chinese Noodles with Chicken
Ingredients
- 1 Zucchini Sqashz
- 1 Carrot
- 1 Celery Stalk
- 1 Garlic Clove
- 1/2 cup Soy Sauce
- 2 Rice Noodles
- Salt and Pepper to taste
- Chicken Breast
Instructions
- Cube the vegetables and chicken.
- Soak the noodles in hot water for 10 minutes or until they are flexible.
- Strain the noodles.
- In a pan, cook the chicken with the garlic clove and add salt and pepper to taste.
- When the chicken is almost done, add the vegetables and cook for a few more minutes.
- Add the noodles and soy sauce and mix together. Let the mixture cook, on low heat, for a few minutes.
- Serve and enjoy
