Mushroom tacos have become one of my husband’s favorite dinners. Mushroom tacos with poblano and cheese are very easy to make and a truly Mexican delight. I cook authentic Mexican food and I really look to make my family meals something nutritious, affordable, fast, and delicious! Really, this is a fast dinner recipe. You will have these portobello mushroom tacos ready in less than 20 minutes. You can use any kind of mushrooms to make this mushroom tacos recipe. The poblano with the mushroom makes an amazing combination of flavors that becomes just an indulgent pleasure with the melting cheese.
Ingredients to make mushroom tacos
These ingredients make around 8 Tacos and serve 4 people.
- 5 cups of chopped or sliced mushroom
- 3 poblano peppers
- ½ cup chopped onion
- ½ teaspoon of minced garlic
- ½ spoon of olive oil
- 8 Tortillas
- 250 gr or 9 ounces of melting cheese
How to Make Mushroom Tacos Recipe
- Start by warming up a pan and adding the olive oil
- Once the olive oil is hot add the garlic and onion and sauté until the onion has changed color.
- Add the mushrooms cut in slices or chopped
- Add the poblanos cut in little squares
- Cook stirring once in a while for about 5 minutes.
- You will know that the mushrooms are cooked once they have changed color and had become smaller.
- Add the cheese, turn of the heat, and cover the pan with a lid to let the cheese melt with the hotness that is already in the pan.
- Warm-up your tortillas and fill them with the Mushroom, Poblano, and Cheese.
- Add your favorite Mexican Salsa for tacos on top! I give you some sugestions at the end of this post.
What kind of Mushrooms can I use to Make Mexican Tacos
My favorite is Portobello but you can also use the following mushrooms types
- Portobello
- White Mushrooms
- Brown Mushrooms
- Champignon Mushroom
Portobello Tacos
This amazing recipe is made out of Portobello with Poblano and cheese, although you can use brown or white mushrooms. Onion and garlic just add the perfect flavor for this portobello taco recipe. I truly love portobello for mushrooms tacos as they have a meaty texture and intense flavor. That must be why they call it vegan meat. Portobellos are a good source of flavor and low in calories. A whole cup of cooked portobello is only 35 calories, what a bargain!
